The Ibiza Spirit Sessions return this season, celebrating the artistry of cocktail culture through a season of exceptional guest mixologists.
Each edition welcomes a renowned mixologist to step behind the bar alongside Nobu Ibiza Bay's own team, reinterpreting one extraordinary spirit through their own signature style. From flavour and technique to storytelling and presentation, every cocktail offers a different perspective on the same bottle.
This season, Ibiza-born BES Gin once again takes centre stage. Bold, organic and infused with habanero peppers grown under the island sun, it becomes the canvas for some of the industry's most celebrated talent.
As the sun sets over Talamanca Bay, take a front-row seat to the theatre of mixology, watching every shake, stir and pour while discovering the inspiration behind each creation.

A BES Gin Season
Returning as the signature spirit of the 2026 season, BES Gin once again defines every edition of The Ibiza Spirit Sessions.
Crafted in the heart of Ibiza, BES is more than a gin, it's an expression of the island itself. Born in the hills of Santa Gertrudis and shaped by the Mediterranean sun, every bottle captures Ibiza's warmth, character and untamed energy.
Throughout the season, each Guest Mixologist is invited to reinterpret BES through their own creative lens, proving how one remarkable spirit can inspire countless possibilities. No two evenings and no two cocktails, are ever the same.
At the heart of BES lies its Mythic Foundation: Habanero Fusion. Three organically grown habanero peppers - Red Savina, Yellow and Chocolate - are cultivated for months before being infused into the gin, creating a distinctive, slow-building warmth powered naturally by capsaicin. The result is a spirit that is unmistakably Ibizan: bold, vibrant and impossible to forget.

the series opens with Dario Schiavoni, one of luxury hospitality's most celebrated mixologists and one of Europe's leading names in contemporary cocktail culture.
Dario first gained international recognition at Bvlgari Resort Dubai, where he led the award-winning Bvlgari Bar onto The World's 50 Best Bars list, making it the only cocktail bar in the world at the time to combine a place in the Top 50 with two Michelin stars.
Today, Dario has returned to Italy to launch ByIT Milano, a destination bar created entirely on his own terms.
